Eating Safely: Gluten, Celiac, and Allergy Watchwords

Those of us who deal with food allergies or who have been diagnosed with celiac know to watch out for the big-time offenders like wheat, dairy, gluten, or whatever else we may be allergic or sensitive to. But not all ingredient listings or menus use such straight-forward terms, and we need to outsmart the tricky terminology.

To help us, the good people at Enjoy Life (who make my absolute favorite chocolate chips and chunks) have put out an extremely helpful chart of common allergens and the terms associated with them. I got one of these at the gluten-free picnic I went to this summer, and I’ve taken pictures to share it with you (below the full chart are closeups so you can read it more easily). Hope this helps!

How to Make Ginnybakes Chocolate Chip Cookie Mix Dairy Free

As you may have seen on Twitter, I recently found a cookie baking mix that is free of tapioca, which is next to impossible to find! It’s ginnybakes chocolate chip love, and it only has 7 ingredients in the mix itself, not including what you need to add. I found it at Whole Foods, and it’s the one that sells out the most from what I’ve seen.

It’s really great that they have a little list on the back of the box that tells you what you need to have in order to make these. Cookie mix that comes with its own shopping list? Yes, please!

I didn’t use butter to make these because I’m dairy free. Instead, I simply replaced it with 2 tablespoons of melted coconut oil and 1/4 cup coconut (or other alternative) milk. I also sifted out the chocolate chips since their ingredients are not listed on the box. I put in Enjoy Life chocolate chips instead.

Making these dairy free as individual cookies can come out a little bit…flopsy.

So the next time I made them, I made a cookie cake, and that turned out much better!

It was very fluffy, great texture, and soooo yummy – perfect! Have you tried Ginnybakes mixes? Did you follow the instructions on the box or alter the recipe? Let me know in the comments.

Keep on living the wheat free life!

Gluten Free Enjoy Life Plentils Dill and Sour Cream

Light, crunchy, and flavorful without being overpowering, Enjoy Life hit the mark with their Plentils Dill and Sour Cream chips.

I’m not usually a fan of chips with sour cream flavoring, mainly because the sour cream tastes fake and is so loaded with chemicals that it gives me heartburn.

Not so with these chips. My fingers weren’t coated with oils or any residue at all, and the flavor was just a bit tangy without being overdone or fake.

I’m a big fan of dill and I would have enjoyed more dill flavor, especially since it took first billing over sour cream, but it was still a tasty snack and also would make a nice accompaniment to lunch or barbecue.

I’d recommend giving these chips a try.

Gluten Free Enjoy Life Plentils Margherita Pizza Chips

Health Values: Gluten free, wheat free, dairy free, non-GMO, trans fat free, cholesterol free, no saturated fats, no artificial ingredients

(Made in a dedicated nut-free and certified gluten-free facility. USA made.)

As a rule, I love Enjoy Life products, so I looked forward to trying Plentils chips one snacky Saturday afternoon as a bridge between lunch and dinner.

My first impression was good – the first chip I tried was light, crunchy, and had a nice flavor. It didn’t taste like pizza at all, but the combination of tomato powder, onion powder, garlic powder, natural flavors and spices seemed to work together well. However, it didn’t take long before that flavor wore on me and I’d had enough after eating only half of a .8 oz bag (that’s point eight – 23g – not eight ounces).

Shortly afterwards, my stomach didn’t feel too good. It’s possible that I was reacting to the yeast extract or the lactic acid, which doesn’t have a good reputation. Nevertheless, I plan to try their Plentil Sour Cream and Dill chips next because they don’t contain lactic acid, so we’ll see if that makes a difference.

I’ll be sure to let you know. 😉
