Chocolate Raspberry Truffles Recipe

I really love truffles, but they’re always so fatty. Sometimes you can taste and even feel the huge amounts of butter truffles have in them.  So as much as I love truffles, I try to avoid them except on holidays. Luckily, you can make high quality truffles at home – for a fraction of the price! These homemade truffles are lower in saturated fat, high in flavor, and taste better than a lot of high end, expensive brand name truffles.

Here’s the super easy recipe for these fabulous sweets:

8 oz. (1 cup) semi-sweet chocolate chips (I like using Hershey’s Special Dark or Enjoy Life chips)
2 Tablespoons seedless raspberry jam
Cocoa powder to dust truffles (optional)

Melt chocolate chips and add raspberry jam, stirring together while warm. Let the mixture cool and shape into truffle-sized balls. You can then dust them lightly with cocoa powder or roll them gently in sprinkles. If you want, you can melt more chocolate and dip them, then refrigerate to harden. Store covered in the refrigerator; remove at least 1/2 hour before serving. Serve at room temperature.

You’ll get about 18 truffles, depending on how large you make them.
